Pazo de Señoráns Albariño 2023 is the benchmark for what Atlantic Spanish whites can do. Estate fruit from the Val do Salnés in Rías Baixas, salty, mineral, pear and lemon peel, a body fuller than most Albariño. At $22-28 this is the wine I recommend to anyone who thinks they only like Sauvignon Blanc. Two glasses in, they rethink everything.

Here is a thing I tell clients constantly. If you only drink Sauvignon Blanc because it is the only white you can pronounce, you are missing most of the best white wine made in the world. Albariño is the first off-ramp. Pazo de Señoráns has been making wine in the Val do Salnés sub-region of Rías Baixas since 1989. The vineyard sits close enough to the Atlantic that the vines taste the ocean. That salinity shows up in the glass. Pear, lemon peel, a little green herb, and then that saline finish that makes it one of the best seafood wines on the planet. The body is fuller than most Albariño, which is why this one ages well if you want to sit on it for three or four years. I pulled a bottle out of my fridge last week for a grilled halibut Wednesday. It held up to the fish, held up to the butter, held up to the conversation. At $22-28 this is what I hand someone when they say they do not like white wine. Nine times out of ten, they do. They just did not know Albariño existed yet.
