Egon Muller Scharzhofberger Kabinett is the benchmark of Mosel Riesling — around 8% alcohol, off-dry, with a sweetness so perfectly balanced by acidity that it tastes weightless. Green apple, slate, white flowers, and a finish that lasts longer than wines with twice the alcohol.

Eight percent alcohol. Let that register. This wine has less alcohol than most beers. And it has more complexity than most wines at any price. Scharzhofberger is a single vineyard on blue Devon slate above the Saar river. Egon Muller's family has been farming it for over 200 years. The Kabinett is the lightest tier — barely ripe, barely sweet, barely there in terms of weight. But the flavor is devastating. Green apple, white peach, wet slate, a floral lift, and an acidity that makes the finish go on for a full minute. Cellar this for 10-20 years and it develops petrol and honey notes that make it even more haunting. Or drink it tonight with spicy Thai food and watch what happens when sweetness and heat meet perfect acidity.
